Dr Who was just about to start when the urge to consume vast quantities of pancakes washed over me. Smugly, I looked up a pancake recipe on my own blog…I know, check me out.
Well, I’m not sure what went wrong but they stuck to the pan and after the third pile of slop, I chucked the batter out and started again.
So, I hope you enjoy this new and improved pancake recipe, I did. We had ours with bananas. Hmm lovely.

On Sunday, I challenged my good friend Lisa to a cook off. She makes a mean chocolate brownie, so my husband tells me. Never one to turn down a chance to pit vegan against dairy, I had a go. I can tell you now, Lisa won, hands down. And I know that without even tasting hers. Why? Because mine was so rubbish. Edible, but rubbish. I got the recipe off the BBC’s vegan section which I usually love. But I think I drew the short straw with this one. You see, it’s just not chocolatey enough, and that’s what makes a brownie, brown I guess. I even added an extra tablespoon of cocoa and chucked 50g of Lindt 70% in for good chocy measure. Like I said, it’s edible, but I reckon there’s got to be better recipes out there…someone? Anyone?
Did any one else see Levi Roots on This Morning? Well, I did, and he cooked this great looking Jamaica cake. Of course it wasn’t vegan, but I my spidey senses were tingling so I thought I’d have a go at converting it.
I dropped the egg in favour of an extra tbs of golden syrup and used soya milk and Pure marge in stead of milk and butter. Result was yummytasticalicious.
Now, I’ve never been a fan of the bakewell tart, after all why would you have a pudding that wasn’t chocolate? But my new diet has forced me to peek beyond the world of cocoa and test out some new delights. And boy I am glad I did. This recipe was taken from the delightful veggies and is a real truimph. I know, I know. But they’re actually quite nice and a fine way to use up some parsnips from the veg box. I took the recipe from Parsley Soup and just used parsnips instead of carrots. My unsuspecting husband will be trying them tonight…arh ha!
I made banana cake yesterday using a recipe by Cherry at Parsley Soup. I used wholewheat self raising flour but still put the baking powder in, not sure if that was necessary or not? I also used light muscovado sugar even though the recipe stated brown sugar. The end result is a heavy, bready loaf cake. Very tasty though. Good with a cup of tea I’d say. Next time I might sprinkle a little brown caster sugar on the top just before it goes in the oven, this will add a little sweet crust to it. Yummy.
