Yummy. A quick, simple, tasty sweet treat first baked for me by my friend Ellen. I’m always so touched when non vegan friends go to the effort to buy ingredients, seek out recipes and spend time creating something for me to eat. It means a lot.
This recipe comes from one of Ellen’s Mum’s cook books, but I have no idea which one, so I am unable to credit I’m afraid.
You can use any jam, but my Dad’s homemade blackberry and apple jam is the best. However, for those of you without jam making fathers, then just pick your favourite off the shelf.
OK so I know this isn’t actually a recipe and not exactly ground breaking, but this site isn’t just for vegans you know. It’s for people who might be having a vegan over for breakfast. Sometimes in the panic, people forget that cereal and toast (with minor adjustments) are a lovely option for a vegan, anytime of day. So here are some of the things you could do. I’ve added my person favourite ‘Weetabix and water’. I know it sounds only slightly more appealing than gruel, but I started eating it when I became pregnant and I’ve had it almost everyday since.
Oh this is a beauty. Not only does it taste great, but you can dress it up anyway you like. You could do it with a layer of puff pastry on top to make it into a pie, or serve it simply with boiled rice or potatoes.
I have to admit this is the first time I have made my own gravy since being vegan. My standard practice is to make up an emergency batch of gravy using shop bought granules. It’s usually a bit of an afterthought once I have dished up to be honest. This is usually enough get me through the dinner but ‘hell no’ would I want my dinner swimming in it. Dr Who was just about to start when the urge to consume vast quantities of pancakes washed over me. Smugly, I looked up a pancake recipe on my own blog…I know, check me out.
Well, I’m not sure what went wrong but they stuck to the pan and after the third pile of slop, I chucked the batter out and started again.
So, I hope you enjoy this new and improved pancake recipe, I did. We had ours with bananas. Hmm lovely.

On Sunday, I challenged my good friend Lisa to a cook off. She makes a mean chocolate brownie, so my husband tells me. Never one to turn down a chance to pit vegan against dairy, I had a go. I can tell you now, Lisa won, hands down. And I know that without even tasting hers. Why? Because mine was so rubbish. Edible, but rubbish. I got the recipe off the BBC’s vegan section which I usually love. But I think I drew the short straw with this one. You see, it’s just not chocolatey enough, and that’s what makes a brownie, brown I guess. I even added an extra tablespoon of cocoa and chucked 50g of Lindt 70% in for good chocy measure. Like I said, it’s edible, but I reckon there’s got to be better recipes out there…someone? Anyone?
