Yes, yes, alright, I know, you can’t have a vegan egg, but which one of you would google ‘vegan Scotch mushroom’? That’s right, a mushroom. I supposed you could have other things in the middle, like a…? Well you could have a…? Actually, I think you’d do well to stick with a mushroom.

Use some SOS Mix, add a pinch of nutmeg, sage and parsley, oh and some chopped brazil nuts too. Mix it all up, roll it out on some flour into a big circle about 1 cm thick. Pick the cutest button mushroom you can find and roll it in flour. Then place it in the middle of the SOS Mix and wrap around. Keep pressing firmly to create a ball. Dust with flour again and roll in some oil. Finally, after all that rolling…roll your ball (not yourself) in bread crumbs. Bake in oven at 180 for 20 mins. Could probably do with a few more spices but still, rather pleasant me thinks.

If you have veggie mates then this works well with an egg too as I tried it on my husband, he gave it a big thumbs up.

  • A mushroom doesnt really cut it as a replacement for the egg, it doesnt have any protein, so I suggest scrambling some tofu, using firm tofu chopped up and mixed with fried onion and vegan soy sauce. Then roll it into a ball. and put the sos mix round it. If you want to be real fancy, you can make one lot of “egg mix” white and another coloured yellow using turmeric and make something that actually looks like an egg.

    Re the above reply, you don’t need to be so obsessed with protein you will get plenty from the sosmix. If you prefer tofu to mushroom fair enough but don’t replace it because of lack of protein, that’s just wrong.

I made vegan scotch eggs and used teeny tiny button mushrooms cooked in beer, stuffed into tofu with goddess dressing for eggy gooeyness, then wrapped in vegan sausage, fried, and then wrapped in biscuit dough and baked.
